DIY: Peach Delight

I’ve been sitting on this recipe ever since peaches came into season. But I’m not a chef though! Maintaining a focus on this blog is really important to me, but food definitely is one of the markers of a home, so think of this post as a food DIY!

Peach Delight for me is peaches atop a sweet cloud with a slight pecan crunch. It’s the perfect dish for a potluck as it’s easy to adjust the measurements to serve a crowd. There are also several cheats that can be had with this dish. I love to use fresh peaches and whipped cream, while my mother uses canned peaches and cool whip. These substitutions will not stop your guests from finishing this in no time. So keep scrolling for all the details!

Ingredients

  • 3 peaches sliced thinly
  • Juice of 1 half lemon (pro-tip strain)
  • 2 tablespoons brown sugar
  • 1 cup all purpose flour
  • 9.5 in pie dish
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 cup butter
  • 1 cup pecan
  • 8 oz cream cheese
  • 1 cup whipping cream
  • 1 cup confectioners sugar
  • 1 teaspoon vanilla extract

Preheat oven 350°

Equipment: 9.5 in pie dish, mixer, bowls

1.     Start by pouring lemon juice over the thinly sliced peaches. Mix in brown sugar.

2.     Mix flour, salt, baking powder until well mix. Add softened butter to form dough. Press into buttered pie dish. Bake for 12 minutes or until crust has browned. Place on rack to cool.

3.     Beat cream cheese, confectioners sugar and vanilla extract until well combined.

4.     Beat whipped cream with mixer until peaks form and hold.

5.     Fold whipped cream into cream cheese mixture.

6.     Spoon cream mixture onto crust.

7.     Arrange peaches atop.

8.     Chill to serve.
